The canonical “weeknight after a hard session” dinner — zero cooking, just assembly from the Sunday/Monday batch. Designed for G’s Tuesday post-run dinner where you want volume, recovery carbs, and protein without standing at a stove.

Ingredients (2 servings — uses batched components)

  • 200g mixed greens (rocket + spinach)
  • 250g batched roasted potatoes (reheated 4 min air fryer to re-crisp, optional)
  • 150g batched air-fried roasted vegetables (pepper / zucchini / onion mix)
  • 3 hard-boiled eggs from batch (2 G / 1 Harshitha)
  • 60g feta, crumbled (40g G / 20g Harshitha)
  • 200g cherry tomatoes, halved
  • ½ cucumber, diced (~100g)
  • 30g walnuts, toasted (18g G / 12g Harshitha)
  • 30g batched vinaigrette (20g G / 10g Harshitha) — the lemon–olive oil dressing from the Monday batch
  • Bread (G only, training-day carb top-up): 1 slice sourdough (~40g)

Method

  1. Re-crisp potatoes 4 min air fryer at 180°C (optional — they’re fine cold).
  2. Peel and halve eggs.
  3. Plate: bed of greens, potatoes, roasted veg, tomatoes, cucumber. Eggs on top, feta and walnuts over, dressing drizzled.
